Breakfast Fried Rice

Quick and filling Breakfast Fried Rice is a great way to use up your leftover rice and is a delicious change up to your breakfast routine.

– 1 cup brown rice, uncooked (or about 3 cups cooked) – 4 slices thin cut bacon – 2-4 tablespoon water – 2 large eggs plus additional for serving – ¼ cup green onions sliced (about 4), plus additional for serving – 1 tablespoon coconut aminos

INGREDIENTS

Prepare your rice as per the package directions and spread out in a shallow baking dish to cool slightly.

Cook Rice.

In a large skillet, cook the bacon until crispy. Remove to a paper towel lined plate and dice when done.

Cook bacon.

Fry the rice in 1 tablespoon of reserved bacon grease for 2-4 minutes.

Fry rice.

Move the rice to the side of the pan, crack the eggs into the centre and stir eggs to scramble.

Scramble eggs.

5.

Add the bacon and green onions and give it a good stir to combine with the rice and scrambled eggs.

Mix.

Mix in the coconut aminos.

Stir in sauce.

7.

Move the rice to the edges and crack any additional eggs for serving in the centre. Cook as desired.

Fry extra eggs.

– Sriracha or another hot sauce of choice – Sliced Avocado – Sesame Seeds – Red Pepper Flakes
