Cajun Chicken Sheet Pan

A one dish, sheet pan dinner at it's finest, this Cajun Chicken with Sweet Potatoes and Kale is packed with flavor and ready in under an hour.

– 2 lb sweet potatoes  – 1 tablespoon olive oil  – 2 tablespoon Cajun seasoning – 1 lb boneless, skinless chicken breasts – 1 bundle kale – 3 tablespoon butter – 1 and ½ tablespoon honey

INGREDIENTS

1.

Prep sweet potatoes and place on a sheet pan with the chicken. Bake at 425 F for 25 minutes.

Bake.

Meanwhile, wash, dry and rip kale. Mix Cajun honey butter.

Prep Kale.

Spoon some honey butter over the chicken and brush it on.

Baste chicken.

Bake for an additional 5 minutes and then baste the other side.

Bake and baste.

Bake for an additional 5 minutes until the kale is crispy on the edges

Add kale.

Dish up and enjoy with some additional honey butter drizzled on top.

Serve

Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days. To Reheat: Reheat leftovers in the microwave until warmed through. You can also reheat in the oven at 350 F for 10 minutes until heated through. Don't add the kale until the last 3 minutes.
