Chorizo Rice Skillet

This wholesome one pot Chorizo Rice and Beans packs MEGA flavor. Less than 15 minutes of prep and makes great leftovers!

– 1 lb uncooked chorizo – 1 medium yellow onion – 1 bell pepper diced  – 2 cups long grain brown rice – 1 can black beans  – 1 can diced tomatoes and green chiles – 1 and ½ teaspoon chili powder – 1 teaspoon garlic powder – ½ teaspoon cumin – ½ teaspoon fine sea salt – ¼ teaspoon black pepper – 5 and ½ cups water

If there is excessive grease, drain it off before proceeding with the next step.

Brown Chorizo.

Add to the pan with the sausage and cook until softened.

Sauté vegetables.

Add the rice, seasonings, etc to the pan, stir and cover. Cook until rice is soft, stirring intermittently.

Add remaining ingredients.

Rest.
