Flourless Oat Waffles  (In a Blender)

With a crispy exterior and a fluffy interior, these blender waffles are sure to be a favorite for lazy weekends and busy weekdays alike!  Such a cozy and filling breakfast!

– ⅔ cup rolled oats – 1 teaspoon baking powder – ¼ teaspoon sea salt – ⅛ teaspoon cinnamon – ⅜ cup water – 2 tablespoon melted coconut oil – 1 egg – 1 tablespoon maple syrup – ½ teaspoon vanilla

Combine ingredients in a blender until smooth. Let batter sit for 10 minutes.

Heat a waffle iron, spoon 1/4-1/3 cup of batter and cook until lightly browned and crispy.

Variations

Blueberry Oat Waffles- Fold in 1 cup of fresh or frozen blueberries. Savoury Oat Waffles- Omit the maple syrup, cinnamon and vanilla.
