Pizza Bowls with Quinoa

Enjoy all of your favorite pizza flavors in these easy baked quinoa bowls. A quicker and healthier way to satisfy your pizza cravings!

– 3 cups cooked quinoa – 1 cup pizza sauce – 1 lb spicy Italian  – ½ green pepper  – ¼ red onion  – ½ cup cherry tomatoes  – 2 cups mozzarella cheese

INGREDIENTS

Cook quinoa, shred cheese, chop veges, cook meat, etc.

Prepare Ingredients.

Layer: 1/3 cup quinoa, 1 tbsp sauce, 1/2 cup of toppings, 1/4 cup shredded cheese and repeat.

Assemble.

Place the ramekins on a large cookie sheet bake at 425F for 15-20 minutes until the cheese is melted and bubbly.

Bake.

Careful- the ramekins will be hot!

Assemble "pizzas" in ramekins, cover and store in the refrigerator for up to 2 days or freeze for up to 3 months. When ready to eat, thaw in the refrigerator if frozen and bake as per directions.
