Rice Cooker Coconut Rice 

Coconut rice can easily be made in a rice cooker and it is such an easy way to enjoy this Thai inspired side dish. It turns out perfectly every time.

– 2 cups white jasmine rice – 1 (14 oz) can coconut milk (full fat) – 1 and ¼ cups water – 1 teaspoon fine sea salt

INGREDIENTS

Rinse the rice 2-3 times until the water is nearly clear. Drain.

Wash Rice.

Add all of the ingredients to a rice cooker and combine. Turn on for one cycle.

Mix and Cook.

Garnish with fresh herbs such as cilantro if desired.

Fluff and Serve.

Make it Your Own!

Try Using Coconut Water- Replace water with equal parts unsweetened coconut water for extra flavor. – Garnish With Coconut- Up the taste of coconut by stirring in 2 tablespoon of shredded coconut after cooking and garnishing with additional toasted coconut flakes. – Cilantro Lime- Stir in ¼ cup of chopped cilantro and 2 tablespoon lime juice (1 lime) after it has finished cooking.
