Teriyaki Turkey Bowls

Influenced by Asian flavors, this Teriyaki Turkey Rice Bowl is an easy dinner that filled with fresh flavor and simple ingredients. Topped with a simple Teriyaki-inspired savory sauce, this tasty bowl is perfect for a busy weeknight dinner and is a great option for meal prep too.

– 1 and ½ cups rice of choice – 1 cucumber – 3 cups baby carrots – 3 cups broccoli cut into 1 inch florets – 3 cups frozen shelled edamame – 2 tablespoon avocado oil – ½ teaspoon fine sea salt divided – ½ teaspoon black pepper divided – 1 lb ground turkey

Cook the rice as per the package directions.

Toss the vegetables with 2 tablespoons of avocado oil and ¼ teaspoon each of sea salt and black pepper.

Roast vegetables.

In a large skillet over medium-high heat, add the turkey and ¼ teaspoon each of salt and pepper.

Whisk together all of the homemade sauce ingredients in a small saucepan.

Divide the rice evenly between 4 large bowls. Divide the turke and the vegetables evenly into the bowls.

Garnish with greens onions, toasted sesame seeds and extra teriyaki sauce.
