Cajun Shrimp and Rice Skillet

An easy one pot meal, this Cajun Shrimp and Rice Skillet has flavors that will remind you of a Jambalaya but is ready in under 30 minutes.

– 1 tablespoon butter – 1 and ½ cups long grain white rice – 3 cups water – 1 tablespoon Cajun seasoning – ¼ teaspoon fine sea salt plus additional to taste – 1 (16 oz) bag frozen shrimp thawed, peeled and deveined – 1 cup frozen corn

INGREDIENTS

In a large skillet, melt the butter over medium high heat. Add the rice and stir for 2-3 minutes to lightly toast.

Add the seasonings and water and stir.

Cook.

Cover and simmer for 10 minutes over medium heat, stirring occasionally.

Cook.

Stir in corn to allow it to cook for the last five minutes.

Add corn.

Spread the shrimp out on top and cover the pan with a lid.

Cook shrimp.

Cook for 4-5 more minutes until the water is absorbed, the rice is tender and the shrimp are cooked through and pink.

Cook shrimp.

Some tasty additions would be: – Bell Pepper (or stir some chopped roasted red peppers in at the end) – White Onion – Carrots – Celery – Spinach (Stir it in at the same time as the corn)
