– 1 tablespoon avocado oil
– ¼ cup red onion diced
– 2 cloves garlic
– 1 and ½ cup long grain white rice
– ¼ cup pumpkin puree
– 2 teaspoon dried thyme
– 1 teaspoon salt
– ½ teaspoon pepper
– 4 cup water
– 1 tablespoon balsamic vinegar
