Stuffed Barbecue Chicken Sweet Potatoes

Ingredients

2 sweet potatoes (about 8 oz or 220 g each) washed and scrubbed but not peeled
1 chicken breast cooked and shredded (about 8oz raw or 1.25 cups cooked and shredded)*
¼ cup Barbecue Sauce
2 tablespoon diced red onion
½ cup shredded cheddar

Instructions

Preheat the oven to 400 °F. Use a fork to poke a few holes into each sweet potato and place them on a cooking sheet and bake for 40-60 minutes, flipping over halfway through, until cooked through and soft. (See the notes below for a quicker option).
Meanwhile, in a medium sized bowl, mix the shredded chicken with the BBQ sauce until evenly coated.
When the sweet potatoes are cooked, remove from the oven. Cut an oval on the top and scoop the sweet potato into a bowl leaving about ¼ inch in the peel so that they hold their shape. Roughly mash the sweet potato then add the chicken and red onion to the bowl. Stir to evenly combine and then divide the mixture back into the two sweet potato shells.
Top with cheese if desired and place back in the oven to warm through for 10 minutes. Then switch to broil for an additional 1-2 minutes until the cheese is nicely melted.

Notes

Leftovers

Store leftovers in the refrigerator for up to 4 days. Reheat in the microwave or in the oven at 350F for 20 minutes.

BBQ Sauce Substitute

If you don't have BBQ sauce on hand, you can mix together the following: 3 tablespoon tomato paste, 1 and ½ teaspoon maple syrup (or honey), 1 and ½ teaspoon balsamic vinegar (or apple cider vinegar), ¼ teaspoon paprika, ¼ teaspoon garlic powder and ⅛ teaspoon of salt.

Quicker Sweet Potato Prep (Microwave)

If you are short on time, you can also cook the sweet potatoes in the microwave for the first step instead of the oven. Poke holes in the sweet potatoes and microwave on high for 3-5 minutes each until soft. Proceed with the rest of the recipe as written.

Shredded Chicken

To make shredded chicken:

Place the chicken in a large pot and fill with enough water to cover the chicken by 1 inch. Bring to a gentle boil over medium-high heat and then reduce the heat to medium and let simmer until the chicken is cooked through to 165 F, about 12-14 minutes.
Use a fork or slotted spoon to remove the chicken and shred. TIP: Place it in a deep bowl and use a hand mixer or in a stand mixer to shred it quickly. Or, you can dice it into small pieces.
