In a large shallow dish (such as a pie plate), whisk together the eggs, milk, vanilla, maple syrup and cinnamon.
Dunk the stale bread into the egg mixture for 10-15 seconds per side.
Preheat a skillet or griddle over medium heat (350-400 °F) and grease with coconut oil or butter.
Place the soaked bread on the greased and heated griddle or skillet. Let the French toast cook for 2-4 minutes per side until lightly golden brown.
