Classic French toast is one of my favorite brunch recipes to start a relaxing Saturday morning.
But a few months ago when we had some of my mom's homemade sourdough bread around, it got even better. (The same way sourdough makes these recipes even better).
It had the best texture! As per usual, I sliced up the fresh bread the night before and left it sit out overnight to allow it to soak up all of the delicious egg custard.
And it was simply fantastic.
So if you've been looking for a way to up your homemade French toast game, I highly recommend making it with some crusty sourdough bread.

The Ingredients
- Sourdough Bread- For best results, use slightly stale sourdough bread slices. I like to set the bread out the night before so that it dries out a bit in order to soak up the egg custard mixture without getting soggy. If you'd like to use a different bread, you can make this recipe with any bread you like- just make sure it has dried out a bit.
- Eggs
- Coconut Milk- I love making this recipe with coconut milk for the rich flavor that it adds. But you can use any dairy or dairy-free milk instead.
- Maple Syrup- Melted honey or brown sugar can be used instead.
- Vanilla Extract
- Cinnamon
The Method
1. Mix Egg Mixture. In a large shallow dish (I like to use a pie plate), whisk together the eggs, milk, maple syrup, vanilla and cinnamon.
2. Dip Bread. Dunk the stale bread into the egg mixture for 10-15 seconds per side.
3. Cook. Preheat a skillet or griddle over medium heat and grease with coconut oil or butter. Place the soaked bread on the greased and heated griddle or skillet. Let the French toast cook for 2-4 minutes per side until lightly golden brown.
4. Serve.
Leftovers and Storage
To Store: Cool leftover French toast completely on a wire rack and store in an airtight container in the refrigerator for up to 3 days.
To Freeze: Allow to cool completely on a wire rack and then freeze in a single layer on a cookie sheet. Once frozen, place in a container or bag and store in the freezer bag for up to 3 months.
To Reheat: Reheat in the microwave until warmed through, toast in the toaster or bake in the oven at 350 F for 5-10 minutes. No need to thaw before reheating.
Make it Your Own
- Include Almond Extract- For extra flavor, add ¼ teaspoon of almond extract. (I love this simple French toast variation!)
- Citrus French Toast- Add the zest of one orange or lemon. If you'd like, you can also replace half of the milk with orange juice.
- Make it Gluten Free- Use a gluten free sourdough bread.
- Savory French Toast- Omit the cinnamon, maple syrup and vanilla. Add ¼ teaspoon of salt and garnish with savory toppings such as chives and bacon.

Tips for Success
To achieve perfect French Toast (and avoid soggy French toast), follow these tips!
- Use slightly stale bread- the best bread for French toast is slightly stale and dried out. That way it can soak up all of the custard without becoming soggy.
- Slice the bread ahead of time- slice up the bread and set the slices of bread out on a flat plate the night before to allow them to dry out.
