It can be very helpful to know how to make different kitchen staples from scratch. From barbecue sauce to taco seasoning, it is nice to be able to make what you need when you need it.
Once you've learned to make a delicious vinaigrette, all you really need to keep on hand is some quality olive oil and vinegar plus a few basic spices and you can make all so sorts different versions to suit your salad of the day.
This is my go to recipe whenever I'm making any Mediterranean or Greek inspired salad. You'll love it because it's:
- Quick and Easy: This recipe is ready in under 5 minutes, perfect for times when you need a flavorful dressing fast.
- Simple Ingredients: This recipe uses just 6 basic ingredients you likely have on hand. And by making your own dressing, you have complete control over the ingredients, ensuring a healthier option without any unnecessary additives.
- Flavorful: Bursting with the bold flavors, this dressing adds a deliciously tangy and herbaceous kick to any salad.
The Ingredients
- Extra Virgin Olive Oil- This is the place to use your good quality olive oil. If needed, you can use a mild avocado oil instead.
- Red Wine Vinegar- Balsamic or white wine vinegar can be used instead but the dressing will have a slightly different taste.
- Garlic Powder- I prefer to use garlic powder as I find it has less bite than fresh garlic and mixes in more evenly. You can use one freshly minced garlic clove if you prefer.
- Dried Oregano- I'm talking about the dry oregano that still looks like little leaves. If you are using powder, reduce the amount used to ½ teaspoon.
- Sea Salt- Table or kosher salt will work as well- adjust to taste.
- Black Pepper
The Method
1. Mix. Add all of the ingredients and whisk until combined.
2. Use.
Leftovers and Storage
To Store: Store leftovers in an airtight jar in the refrigerator for up to 2 weeks. Before using, give the jar a shake or stir the mixture to recombine. If the olive oil has hardened, allow it to come to room temperature for about 15 minutes before using.
Ways to Use Mediterranean Vinaigrette
- On Salad: Pour it over a simple garden, Mediterranean Salad or make Greek Chicken Pasta Salad
- Marinade: Try using it as a marinade for chicken breasts or thighs prior to grilling.
- Bread Dipper: Serve it as bread dipper with a baguette or sourdough.
- And More: Try drizzling it on pasta, roasted vegetables or grain bowls.

The balsamic vinegar gave my salad the perfect kick of flavor. It only lasted 2 days in my refrigerator because I served it to my family for lunch, I ate it again for dinner and for lunch the next day. It was that good. My new favorite dressing.
