Make your own roasted red peppers with this easy air fryer recipe. All you need is sweet red peppers to make this versatile ingredient. Serve it on its own as an easy vegetable side dish or store for later use to add flavor to a variety of dishes including soup, hummus, pasta dishes, sandwiches and more.

I like to think I share a lot of easy recipes (like canned tuna over rice) but these air fryer bell peppers may very well be the easiest of them all.
Made with super simple ingredients (as in one ingredient total) all you need are sweet bell peppers. No avocado oil, no salt, nothing else. See, I told you- simple!
When you see the jarred versions in grocery stores, it's easy to think that recipes like homemade roasted peppers (along with pickles and applesauce) might be difficult and time consuming, so it is always a pleasant surprise to discover the opposite.
Air frying the peppers is a great option if you want to put in as little effort as possible yet get fantastic results. Plus, it takes a fraction of the time of some other methods.
So let's make some roasted red peppers! And don't worry if you don't have an air fryer- I have notes on using the oven in the recipe card 🙂
The Ingredients
- Red Bell Peppers- This one humble ingredient is all we need for this recipe. If you'd like, you can use another color bell pepper such as yellow, green or orange peppers.
The Method
1. Prepare the fresh peppers. Slice the sweet peppers in half and remove the core, stem and seeds.
2. Cook. Place peppers skin side down in a single layer in the air fryer basket and set the cooking time for 20 minutes.
After 20 minutes, check to see if the skin is blistered and the peppers are tender. If not, air fry for up to 5 additional minutes.
3. Rest. Remove the roast peppers to a large bowl and cover with a tight fitting lid or plastic wrap.
Let cool to room temperature and then peel off the skin of the peppers. Don't skip this step as it is the easiest way to remove the skins!
4. Serve!
Leftovers and Storage
To Store: Place the peppers in an airtight container in the refrigerator for up to 4 days. You can freeze the peppers but the texture may be slightly altered with thawing. To preserve for longer, see "marinated peppers" below.
To Reheat: You can enjoy the roasted red peppers cold or reheat them in the microwave or in the air fryer for about 3-5 minutes at 350 F.
Marinated Peppers: Cut the air fryer roasted peppers into smaller strips and place in a mason jar. Cover with avocado or olive oil, ¼ teaspoon of fine sea salt, black pepper and optionally minced garlic and fresh parsley. Cover and refrigerate for up to 2 weeks.

Once the red peppers are cooked and peeled you can play around with different seasonings and flavors such as:
- A simple pinch of salt and black pepper
- Garlic Powder
- Italian Seasoning
- Balsamic Vinegar Glaze (like Balsamic Sautéed Brussels Sprouts)
Serving Ideas
Roast bell peppers add the best flavor to so many dishes! Enjoy them as is for a healthy side dish or add them to a variety of recipes such as:
- Pasta: They would be excellent stirred into this Sautéed Spinach Pasta.
- Pizza: Use them on Artisan Pizza Dough along with Italian sausage and cheese for a delicious and easy pizza.
- Sandwiches: These would be a great addition to a simple Grilled Cheese or on this Pesto Turkey Sandwich.
- Soup: Add them to this Tomato Soup for a sweet and smoky flavor twist.
- Breakfast: Air fryer peppers are a great way to add flavor to frittatas, as a simple topping on toast (or a sourdough breakfast sandwich) or stirred into scrambled eggs.
- Dips and Spreads: Add it to hummus, pesto or use it to make Muhammara.
- And More: On crackers, as part of a Charcuterie board or another favorite way I like to use them is sliced and stirred into Cajun Shrimp Rice Skillet.
Key Tips for Perfect Roasted Red Peppers
- Don't Skip the Resting: I know if might be tempting to just dive right into the peppers after cooking them but it makes it so much easier to peel off the blistered skin if you let the hot peppers set and steam in an airtight bowl first.

- Remove the roast peppers to a large bowl and cover with a tight fitting lid or plastic wrap. Let cool to room temperature and then peel off the skin of the peppers.
