Pineapple and coconut is a fantastic flavor combo (almost as good as chocolate and peanut butter!).
And along with being delicious, the flavors also, at least for me, evoke a sense of nostalgia for a beach vacation or hot pool day.
Perfect for any occasion and I love making a batch of these to enjoy with friends on a sunny summer evening.
But living in a climate with more winter than summer, they're also a fun way to add a sense of sunshine on a dark January day.

- Alcohol-Free. Enjoy the tropical flavors of a Pina Colada without the alcohol, making it perfect for anyone, even if you're cutting back on or avoiding alcohol.
- No Cream of Coconut Required. Unlike typical pina colada recipes which call for cream of coconut (basically a heavily sweetened coconut cream) which can be hard to find (and mean storing an extra ingredient in your refrigerator...), this recipe uses a combination of honey and canned coconut milk for a naturally sweet and creamy drink.
- Wholesome Ingredients. Made with canned coconut milk, frozen pineapple chunks, and natural sweetened, this mocktail contains several nutrients and is just sweet enough.
- Ready in Minutes. With simple ingredients and minimal preparation, this refreshing virgin pina colada comes together in no time.
- Refreshing and Delicious. The perfect blend of tropical flavors and the cool, creamy consistency makes this pina colada recipe a delightful and satisfying treat.
The Ingredients
- Pineapple Chunks- Frozen pineapple adds texture and much of the flavor. If you prefer, you can use fresh pineapple, but I like frozen for a slushier consistency.
- Pineapple Juice- Provides sweetness and adds additional pineapple flavor.
- Coconut Milk- Canned coconut milk gives the mocktail a creamy texture and rich coconut flavor without the need for cream of coconut.
- Honey (Optional)- Adds sweetness- you can use another sweetener of preference or leave it out.
The Method
1. Blend ingredients. In a blender, combine the coconut milk, pineapple juice, frozen pineapple chunks and honey (if using). Blend until smooth.
2. Adjust. Blend in ice cubes as needed to reach your desired consistency and add more honey to taste. (Or, if you'd like to add some veggies, use frozen cauliflower in place of the ice. You can't taste it and is helps it to become more slushy like ice does).
3. Enjoy! Pour into glasses, garnish as desired and serve.
Leftovers and Storage
To Store: This drink is best enjoyed fresh! If you do have leftovers, you can pour them into ice cube trays and freeze. Then, when ready to drink, add them to a blender with additional pineapple juice and coconut milk and blend until smooth.
Make Popsicles: Alternatively, my favorite way to use up the leftovers (if I happen to have any...) is to make popsicles! Simply pour the mixture into popsicle molds, add popsicle sticks and freeze. They make for a very refreshing summer treat.
Make it Your Own
- Make it Shaken: For a non-slushy version, increase the pineapple juice to 1 and ½ cups and omit the pineapple chunks. Shake or stir the ingredients together and serve over ice.
- Add Lime: Add a splash of fresh lime juice for extra flavor.
- Make it Vegan: Use maple syrup instead of honey to keep this mocktail vegan.
- Toasted Coconut Garnish: Toast coconut in the oven until golden brown. Run a lime wedge around the edge of a glass and then swirl the glass in the toasted coconut for a decorative (and delicious) garnish.
You can use fresh pineapple to prepare frozen pineapple for this recipe. Peel, core and dice a fresh pineapple into 1 inch chunk and spread onto a layer on a silicone or parchment lined baking sheet. Freeze the pineapple for a minimum of 2 hours and then transfer to a ziptop bag for later or use for the recipe.

- Cold Ingredients. Start with frozen pineapple and chill the other ingredients for a slushier consistency.
- Add Liquid First. Pour the pineapple juice and coconut milk into the blender first to help the blending process run smoothly.
- Adjust to Taste. Adjust the amount of honey or to suit your taste. Or add more pineapple chunks if you prefer a more pineapple forward taste.
