First things first, let's talk about what pasta you should be using for pasta salad.
Shape
When it comes to pasta for pasta, small shapes reign supreme, especially ones with nooks and crannies to hold extra sauce.
Let's explore some of the top contenders in this small pasta category, shall we?
- Rotini (Fusilli): This corkscrew-shaped pasta is a favorite for pasta salads, as it offers plenty of nooks and crannies to trap dressing and other flavors.
- Cavatappi (Spirals): With its spiral shape and ridged texture, cavatappi pasta adds a playful twist to any dish. The spirals provide plenty of spots to hold extra dressing.
- Conchigliette (Small Seashells): These tiny shell-shaped pasta pieces are not only adorable but also perfect to pasta salads. Their curved shape and small size make them great for holding dressing, ensuring flavor in every bite.
- Penne: With its tubular shape and angled ends, penne is a classic choice for pasta salad. Its sturdy structure holds up well to tossing and maintains its shape even after being dressed.
- Farfalle (Bowtie): Resembling little bowties, farfalle pasta adds a whimsical touch to pasta salads. Its wide surface area provides ample space for catching delicious toppings and dressing. This shape can be a bit more finicky to cook, though, as the centers can end up turning out more al dente than the edges.

Gluten Free Pasta Varieties
When it comes to pasta for pasta salad, you can use traditional wheat noodles or substitute with different varieties such as brown rice (this is what I use most often), lentil or quinoa pastas.
Essentially the process is the same, but there are a few things to keep in mind:
- Some gluten-free pastas advise rinsing before use. Follow these directions if they are on the package.
- The cooking times will vary significantly. Refer to the cooking times on the package to gauge how long you should cook it for.
How to Cook Pasta for Pasta Salad
1. Bring Water to a Boil. Start by bringing a large pot of well-salted water to a rolling boil over high heat.
*It is important to use well salted water in order to season the pasta. This is the best opportunity for seasoning the pasta.
2. Cook the Pasta. Once the water is boiling, add the pasta to the pot. Cook the pasta according to the package instructions until it reaches a soft texture, but is not mushy. Aim for about 2-3 minutes past al dente as the pasta will firm up a bit when cooled.

3. Drain the Pasta. When the pasta is cooked to the desired doneness, carefully drain it into a colander to remove excess water.

4. Rinse (if Required). Depending on the type of pasta you're using, you may choose to rinse the pasta under cold water to stop the cooking process and remove some of the starch.
However, rinsing can also remove some of the salt that we just added by cooking it in saltwater. Also, the starches can help the dressing to stick, so unless required by the type of pasta you are cooking, I would skip rinsing it.

5. Cool the Pasta. Transfer the drained pasta to a baking sheet lined with parchment paper or a silicone mat. Toss with 1-2 tablespoons of olive oil and spread the pasta out into an even layer to allow it to cool for about 5 minutes. This helps prevent the pasta from clumping together.

6. Dress the Pasta. After 5 minutes, while the pasta is still warm, add it to a large mixing bowl along with ¼ of the salad dressing and toss to combine. The pasta will absorb the dressing best while it is still warm, which yields an extra flavorful salad. (We do the same thing with potatoes in potato salad).

7. Finish the Pasta Salad. Once the pasta has cooled the rest of the way, about 10-15 minutes, add your remaining salad ingredients, such as vegetables, proteins, herbs, and dressing (reserve about ¼), and toss everything together until well combined.

8. Chill. For best flavor, chill for at least 30 minutes to allow the flavors to blend. Toss with the reserved dressing and serve.
If the salad has been chilled for longer than 1 hour, allow it to come to room temperature for 15-30 minutes before serving so that the pasta texture isn't too hard from being cold.
Preparing Pasta (Shortcut Method)
The above method yields the best pasta for pasta salad, but if you're in a hurry to make pasta salad to enjoy immediately, follow these steps for the next best results.
- Bring Water to a Boil. Start by bringing a large pot of well-salted water to a rolling boil over high heat.
- Cook the Pasta. Once the water is boiling, add the pasta to the pot. Cook the pasta according to the package instructions until it reaches a soft texture, about 2-3 minutes past al dente.

- Rinse Under Cold Water. Rinse the pasta under cold running water for 1-2 minutes, stirring gently to cool it down quickly and stop the cooking process. This step also helps prevent the pasta from sticking together.
- Dress and Assemble. Once the pasta is thoroughly rinsed and cooled, transfer it to a large mixing bowl. Drizzle the pasta with ¼ of the dressing and toss gently to coat. - Prepare Pasta. Cook the pasta according to the above directions up to and including the step of adding ¼ cup of dressing.
- Refrigerate. Transfer the dressed pasta to an airtight container and refrigerate it for up to 1 day. Then, when ready, add the remaining ingredients and toss to combine.
Option 3: Fully Assembled Salad
- Prepare Salad. Fully assemble the pasta salad according to the directions above.
- Refrigerate. Transfer the pasta salad to an airtight container and refrigerate it for up to 2 days.
- Serve. When ready to serve, toss with ¼ of the remaining dressing and allow to come to room temperature for 15-30 minutes. Serve.
Leftover Pasta Salad Storage
Once prepared, leftover pasta salad can be stored in an airtight container in the refrigerator for up to 4 days. It's best to consume it within this timeframe to ensure optimal taste and freshness.
