Peanut Butter Stuffed Dates

These chocolate dipped peanut butter stuffed dates are a wholesome, naturally sweet treat that you're going to want to keep on hand! Made with just a handful of ingredients, they are no-bake and perfect for a sweet snack or homemade gift.

It is surely no surprise at this point that I love the combo of peanut butter and chocolate. But what we don't talk about as much is peanut butter and dates.

And it's a real shame because the combo of sticky, caramel flavored dates with peanut butter is like candy.

So the combo of dates with peanut butter and then dipped in chocolate is nearly impossible to beat! And in the case of these peanut butter stuffed dates, I am sure you will agree because they are:

  • A wholesome sweet treat. Made with natural ingredients like dates and peanut butter, this recipe still satisfies sweet cravings.
  • No-Bake. These are relatively quick to make and don't require you to turn on the oven (neither do White Chocolate Peanut Butter No Bake Cookies!) so whether you have minimal baking skills or just don't want to heat up the house, these are a great option.
  • Great for gifting. They look cute and taste indulgent making these a great homemade gift for friends and family (or new parents). If you are gifting, be sure to disclose they have peanut butter as that is a common allergen!

The Ingredients

  • Medjool Dates- As opposed to other types of dates, Medjool dates are larger and have a soft, caramel like flavor and texture which makes them perfect for these. You can use another type of date but may not be able to stuff as much into them.
  • Peanut Butter- I prefer natural style, smooth, salted peanut butter for these but any type that you like should work.
  • Chocolate- I like to use dark baking chocolate but milk or even white chocolate can be substituted.
  • Ground Flaxseed- Most stuffed dates with peanut butter recipes don't include this but it is my secret ingredient. Adding it thickens the peanut butter filling to help these hold together extra well with a really great texture. I add it to my protein peanut butter cups for the same reason.
  • Coconut Oil- Mixing a bit of this into the melted chocolate helps ensure that it is smooth and glossy. You can substitute with butter or leave it out in a pinch.
  • Salt- A bit of flaky sea salt on top of the dates really brings it all together.

The Method

  1. Prepare the dates. Slice each Medjool date in half on one side and remove the pit. Stretch it to open it a bit to fit the filling in.

  1. Mix the filling. In a small bowl, combine the peanut butter and flaxseed.

  1. Fill the dates. Scoop about 2 teaspoons each of the peanut butter mixture into each date. Freeze for about 20 minutes to set in order to prepare for the chocolate.

  1. Dip in chocolate. Melt the chocolate and coconut oil in the microwave in 20 second bursts. Remove the dates from the freezer and dip the open side into the chocolate then place on a lined plate or baking sheet. Repeat with remaining dates and then drizzle any remaining chocolate over top then sprinkle with salt. Freeze for at least 20 additional minutes to set.

Leftovers and Storage

To Store: Once the chocolate has fully set, store the stuffed dates with peanut butter in the refrigerator for up to 1 week or in the freezer for up to 3 months. If frozen, allow them to thaw for about 10 minutes so that they are a bit softer to bite into.

Note: The dates soften at room temperature but should be okay for up to 1 day at room temperature, if you are serving them as part of a snack tray or want to pack them along for a sweet treat.

Make it Your Own

While I think these are pretty much perfection as they are (I LOVE this combo!), this recipe is very customizable.

  • Switch up the peanut butter. You can use crunchy peanut butter for extra texture or swap it out with another nut butter (such as macadamia nut butter or pecan butter) or a seed butter (such as pepita butter).
  • Change up the chocolate. You can use dark, milk or white chocolate depending on how sweet you want these.
  • Or skip the chocolate topping (though why would you? 😉 ). The combo of just peanut butter and dates is also delicious!
  • Add toppings for crunch. Immediately after dipping in chocolate while it is still soft, you can sprinkle some crushed peanuts or another topping over for extra texture.

Notes for the Best Peanut Butter Stuffed Dates

  • Don't skip the flaxseed. This is my secret ingredient for ensuring the peanut butter filling holds together.
  • Check your dates. Always inspect the inside of your dates for mold before using.
  • Dip the peanut butter side down. When coating with chocolate, dip the side with peanut butter so that when the chocolate hardens it holds everything in place.
  • Freeze before dipping. Allowing the filled dates to freeze before adding the chocolate prevents the filling from spilling into the chocolate.

  • 12 Medjool dates

  • 1 teaspoon coconut oil
  • ¼ teaspoon flaky sea salt
