Homemade Cajun Seasoning

A few years ago, I wanted to try my hand at making Jambalaya from scratch. And in order to do that, I needed to make some Cajun seasoning.

I went a little overboard and made a pretty big batch of seasoning (enough to make several batches of Jambalaya!) and so I started experimenting with using it to flavor all sorts of dishes.

Fast forward a few years and now you can find several recipes that I have developed which call for Cajun spice.
