11+ Recipes to Make for Christmas Morning Brunch

If you're looking for a delicious start to your Christmas, you're in the right place! This collection of recipes are perfect for a cozy Christmas morning. I've outlined the servings (and whether it is easily scalable), the effort and hands-on time (plus make-ahead options) and more to help you pick your festive brunch!

If you've followed The Nessy Kitchen for any period of time, you'll probably know that brunch is my favorite meal!

When planning for the weekend, planning brunch is at the top of my list.

And it may come as no surprise that when thinking about Christmas, our morning meal is front and center. (Though I do put a lot of thought into my contribution to the family Christmas potluck dinner as well).

So if you're brainstorming what to make this Christmas morning, I've got you covered.

Savory Christmas Brunch Recipes

Eggs in Purgatory
Like an Italian version of Shakshuka, Eggs in Purgatory is a delicious savory meal featuring eggs poached in a flavorful tomato sauce.
Servings- Easily scalable (adjust the servings on the recipe card and it will do the calculations for you)
Make Ahead- The sauce can be prepared ahead of time.
Effort on Christmas Morning- Less than 20 minutes- if you make the sauce ahead of time, all you have to do is cook the eggs in the sauce (and toast some sourdough if you'd like).
Festive Tip- Use green peppers for a red and green breakfast.

Sourdough Breakfast Sandwich
Filled with bacon, cheese and an array of vegetables, this sourdough breakfast sandwich is hearty and satisfying.
Servings- Easily scalable but I recommend no more than 6 as it can be difficult to have them ready at the same time. (Adjust the servings on the recipe card and it will do the calculations for you)
Make Ahead- You can prepare the bacon, slice the cheese and cut the vegetables ahead of time and store in the refrigerator.
Effort on Christmas Morning- Depending on the number of sandwiches, you may need about 30 minutes.
Breakfast Sandwich Recipe ->

Eggs Benny Bowl (Breakfast Poutine)
These bring together the flavors of classic Eggs Benedict and hash browns in an easy breakfast bowl!
Servings- Easily scalable to many more and way easier to make than several servings of classic Eggs Benedict! (Adjust the servings on the recipe card and it will do the calculations for you)
Make Ahead- Minimal.
Effort on Christmas Morning- About an hour. Prepare the sheet pan first and then while the vegetables are roasting, prepare the Hollandaise and eggs.
To make it easier, you can cook the eggs by cracking them on the sheet pan in the last 7-10 minutes (instead of poaching) and use packet Hollandaise (though my hand blender recipe is super easy- I swear!)
Breakfast Poutine Recipe ->

Crouton Breakfast Casserole
A spin on breakfast strata, this Crouton Egg Casserole can be customized to include your favorite vegetables and breakfast meats. It can also be made with stale sourdough cubes rather than croutons.
Servings- Easily scalable to many more (adjust the servings on the recipe card and it will do the calculations for you)
Make Ahead- Prepare the bacon and croutons, chop the vegetables and shred the cheese.
Effort on Christmas Morning- If you did the make ahead prep, simply mix and assemble (about 10 minutes) and bake (mostly hands off).
Festive Tip- Use red and green peppers.
Breakfast Casserole Recipe ->

Sheet Pan Sweet Potato Hash
Crispy bacon, tender potatoes and sweet potatoes plus eggs baked on one pan, this is one of those recipes that yields exceptionally great results for little effort!
Servings- Easily scalable as needed (adjust the servings on the recipe card and it will do the calculations for you)
Make Ahead- Minimal.
Effort on Christmas Morning- Chop the vegetables, mix and bake- about 15 minutes of hands on and about 45 minutes in the oven.
Sheet Pan Hash Recipe ->

Huevos Rancheros
Give your Christmas breakfast a Mexican inspired flavor with this spin on Huevos Rancheros. Hearty and delicious, it features a tasty homemade sauce, tender tortillas, cheese, eggs and black beans and is sure to impress.
Servings- Easily scalable (adjust the servings on the recipe card and it will do the calculations for you)
Make Ahead- The sauce can be prepared and refrigerated, the cheese can be shredded and the corn tortillas can be made (or use store-bought).
Effort on Christmas Morning- Less than 30 minutes- if you prepared ahead, all you have to do is heat the sauce, poach the eggs and assemble. In the recipe post, I have a tip about assembling the stacks and warming them in the oven if you are making this for a lot of people.
Huevos Rancheros Recipe ->

Greek Yogurt Frittata
Creamy and delicious, this Greek yogurt Frittata is so simple and versatile. Add in whatever combination of vegetables, meat and cheese you wish for endless flavour variations!
Servings- 4-8 depending on portions and sides. (I have a full list of what to serve with frittata here if you need some inspiration!)
Make Ahead- If you are including vegetables and meats, you can chop and cook those ahead of time and then store in the refrigerator.
Effort on Christmas Morning- About 15 minutes hand on- you'll just need to mix everything together and bake.
Festive Tip- Choose red and green vegetables or if you really want to take it up a notch, you could use festive cookie cutters to cut out the pieces (you'll end up with some scraps this way- they're still tasty!)

Sweet Christmas Brunch Recipes

Oat Flour Pancakes
Fluffy pancakes get a whole grain and gluten free twist with oat flour. Tender and buttery, enjoy them as is or see the post for how to make blueberry or chocolate chip versions.
Servings- Easily scalable to many more (adjust the servings on the recipe card and it will do the calculations for you)
Make Ahead- Minimal
Effort on Christmas Morning- 20+ minutes depending on the number of servings.

Oat Flour Pancakes Recipe ->

Sourdough French Toast
Sourdough bread makes for delicious French toast! This breakfast favorite is always a hit and is perfect with all sorts of toppings.
Servings- Easily scalable (adjust the servings on the recipe card and it will do the calculations for you)
Make Ahead- Set the bread out ahead of time.
Effort on Christmas Morning- 20-30 minutes total- mix the batter, dip the bread and cook.
French Toast Recipe ->

Fruit Pizza
This colorful dessert pizza has a shortbread cookie dough crust, is topped with tangy cream cheese frosting and includes plenty of fresh fruit slices.
Servings- About 6 as a side dish (but you can make more than one pizza)
Make Ahead- This whole dish can be made ahead (and is better when it is!).
Effort on Christmas Morning- Simply slice and serve.
Festive Tip- Use Christmas fruits like oranges and cranberries. Or give it a red and green theme with strawberries, raspberries, kiwis and green grapes.

With a crispy exterior and a fluffy interior, these blender waffles are sure to be a favorite! Made with oats, cinnamon and maple syrup, they are such a cozy and filling breakfast.

Make Ahead- Minimal
Effort on Christmas Morning- About 30 minutes total- you will need to blend them, allow the batter to rest and then cook. The time will depend greatly on how many waffles you can cook at a time and how long your waffle maker takes.
