The Ingredients
- Apples- Choose any variety or a combination of varieties for your apple crisp but depending on their natural sweetness, you may need to adjust the amount of maple syrup used. Approximately 4 large apples, yielding around 6 cups when sliced, are needed. I like to slice them about ¼ inch thick to maintain a nice texture, but feel free to vary the sizes according to your preference. Peeling the apples is optional.
- Maple Syrup- While honey or brown sugar can be used as alternatives for the filling, maple syrup adds a delightful flavor that pairs exceptionally well with apples. For more alternatives, see this post on maple syrup substitutes.
- Lemon Juice- Adding a touch of freshness, lemon juice also helps prevent the apples from browning if you prepare the crisp ahead of time. However, it can be omitted if desired.
- Vanilla Extract
- Cinnamon
- Butter- Both unsalted and salted butter work well in this recipe.
- Brown Sugar- Brown sugar provides sweetness and depth of flavor to the topping. If you prefer a less refined sugar, coconut sugar can be used.
- Large Flake Oats- For the crisp topping, large flake oats offer a wonderful texture. If you only have quick oats on hand, they can be used as a substitute, although the resulting texture may differ slightly. Nevertheless, the crumble topping will still be delicious! Use certified GF oats if you need the recipe to be gluten free.
- Oat Flour- To make your own oat flour, simply pulse ¾ cup of large flake or quick oats in a blender until they reach a flour-like consistency. Alternatively, almond flour, whole wheat flour, or all-purpose flour can be used as substitutes for oat flour. Use certified GF oat flour if you need the recipe to be gluten free.
- Sea Salt
The Method
1. Mix filling. Combine the apples, maple syrup, lemon juice, vanilla and cinnamon. This can be done right in the baking pan to save a dish.
2. Prep topping. Melt the butter in a medium bowl. Add the remaining topping ingredients and mix until well combined. The mixture will be crumbly.
3. Top. Sprinkle the topping evenly over the filling.
4. Bake. Bake at 350 F for 45 minutes until the apples are tender and the crumble topping is golden.
5. Cool. Allow to cool for 5 minutes to allow the filling to settle and serve!

To Store: Allow crisp to cool completely and then cover with a lid or plastic wrap and store in the refrigerator for up to 4 days.
To Freeze: Cooked and cooled oat flour apple crisp can also be frozen for up to 3 months.

Make It Your Own
Make it Dairy Free and Vegan- Substitute coconut oil for the butter in the recipe.
Add Nuts- Add a generous handful of raw chopped nuts, such as walnuts, almonds, or pecans, to the oat topping for added crunch and flavor.
Experiment With Spices- In addition to the cinnamon, try adding a pinch of nutmeg or ginger to add depth to your dessert.
Make it a Fruit Medley Crisp- Try replacing half of the apples with another fruit such as:
- Pears
- Blueberries
- Raspberries
- Strawberries (or make some Strawberry Oatmeal Crisp)
Small Batch- Halve the recipe and bake it in a loaf pan. Bake time may be reduced slightly.
Large Batch- Double the recipe and bake it in a 9x13 inch pan. Bake time may be increased slightly.

Ingredients
Filling
- 2 lbs apples chopped
- 1 tablespoon maple syrup
- 2 teaspoon lemon juice
- 1 and ½ teaspoon vanilla extract
- 1 and ½ teaspoon cinnamon
Crumble Topping
- ⅓ cup butter
- 1 cup large flake rolled oats
- ½ cup oat flour
- ¼ cup brown sugar
- 1 teaspoon cinnamon
- ¼ teaspoon fine sea salt
Instructions
- Preheat the oven to 350 °F. In a 7x11 inch or similar size baking dish, combine all of the ingredients for the filling.
- In a medium, microwave safe bowl, melt the butter for 30 seconds. Add remaining topping ingredients and mix until well combined.
- Pour crumble topping evenly over filling and bake for 45 minutes.
- Remove from oven and allow to sit for 5 minutes. Serve.
