Next time you need a potato recipe, let this be it.
While there are so many great ways to enjoy spuds (like fries, fritters or mashed), these air fryer fingerlings are a recipe that you'll want to keep in your back pocket.
You'll love them because they're:
- Easy and Quick. These potatoes cook in less than 20 minutes and require minimal prep (just slice them and season).
- Goes with Anything. Whether breakfast, dinner or any meal in between, these fingerlings are always a great side dish.
- Simple yet Delicious. While the ingredient list is short and basic, the flavor of these potatoes is not at all bland or boring. And using fingerling shaped potatoes just somehow makes it feel fancier.
- Perfect Texture. The skin gets wonderfully crispy while the inside gets tender and an almost buttery creamy texture.
The Ingredients

- Fingerling Potatoes- These oblong miniature potatoes have a thin skin and waxy interior. Their flavor reminds me of that of a Yukon gold (almost buttery). This recipe is intended specifically for them though the method should work for other miniature potatoes as well. If you would like to use larger potatoes, check out this air fryer diced potatoes recipe instead.
- Sea Salt- Table or kosher salt will also work; adjust to taste.
- Black Pepper- For a bit of extra flavor. You can leave it out if preferred.
- Avocado Oil- I usually opt for avocado oil as it has a high smoke point but you can substitute with your cooking oil of choice.
The Method
1. Prep the potatoes. Wash and dry the potatoes then trim off any brown spots or sprouts but don't peel. Slice in half lengthwise.

2. Season. In a large bowl, toss the potatoes with avocado oil, sea salt and pepper to coat.

3. Air Fry. Add the fingerlings to the basket of your air fryer (I recommend no more than two layers of depth). Air fry at 380 F for 18-22 minutes, shaking the basket every 5 minutes, until crisp on the edges and tender in the centers.
Unlike my air fryer diced potatoes which are made using Russets and cooked at 400 F, I found that with the waxier texture of the fingerlings, they turned out a bit better at 380 F. At 400, the outside crisped faster and the inside didn't become as creamy.

4. Enjoy!
Leftovers and Storage
To Store: Store leftover air fryer fingerling potatoes in an airtight container in the refrigerator for up to 4 days. I don't recommend freezing as the potatoes can become a bit mealy with thawing.
To Reheat: These potatoes can be reheated in the air fryer at 350 F for 4-8 minutes or in the microwave until warmed through.

Make it Your Own
- Add Seasoning- The seasonings in this recipe are simple but you can use it as the base for different flavors. Try adding the following:
- Herbs- include 1 teaspoon of a dried herbs or a combination of dried herbs such as basil, rosemary, parsley or thyme (I love using the herb garlic combo from this butternut squash).
- Garlic Powder- include ½-1 teaspoon depending on how much garlic flavor you would like.
- Cumin- give them some earthy flavor by adding 1 teaspoon of ground cumin.
- Top with Parmesan- After cooking, toss the fingerlings with ¼ cup finely shredded fresh parmesan cheese just before serving.

Serving Ideas
- Sandwiches: Try them with a BLT instead of fries.
- Chicken: Serve these with roasted chicken or chicken skewers.
- Seafood: They are delicious cod, shrimp or salmon.
- Beef or Pork: Enjoy them with burgers, steak, pork tenderloin or pulled pork.
- Breakfast: Make them as part of brunch spread (almost like home fries) alongside frittata, a breakfast sandwich and more.

Tips for the Best Air Fryer Fingerling Potatoes
- High but not Highest Heat. Unlike my diced potatoes (which are made with russets), I find that fingerlings turn out best when they are cooked at a slightly lower temperature. In my testing, I found that 380 F turned out the best.
- Shake the Basket. Give the air fryer basket a shake or stir every 5 minutes for most even cooking.

Air Fryer Fingerling Potatoes

Ingredients
- 1 lb fingerling potatoes
- 1 and ½ teaspoon avocado oil
- ¼ teaspoon fine sea salt plus additional to taste
- ¼ teaspoon black pepper
Instructions
- Wash and dry the fingerling potatoes. Cut off any brown spots or sprouts but don't peel. Slice in half lengthwise.
