Air Fryer Diced Potatoes

From fries to fritters to mashed, there are so many delicious ways to enjoy potatoes. But these air fryer cubed potatoes might just be the best!

We make them at least once a week to have alongside breakfast or dinner but honestly, I think I could eat them once a day and still look forward to them every time.

You'll love them because they're:

  • Quick and Easy. Thanks to the air fryer, these potatoes cook in just 20 minutes (no oven preheating necessary) and are made mostly hands off.
  • Crispy Texture. Every edge of these potato cubes gets perfectly crispy while the inside is fluffy and tender. They're almost like eating little bites of crispy french fries.
  • Versatile Side. These air fryer cubed potatoes pair well with almost anything and are equally great alongside baked salmon for dinner or a frittata for brunch.
  • Simple Ingredients. Requiring just russet potatoes, sea salt, pepper and avocado oil the ingredient list is short and wholesome, yet the results are extraordinarily delicious.

The Ingredients

  • Russet Potatoes- I prefer to use russet potatoes (or a similar starchy potato such as Idaho) as the exterior gets nice and crispy while the inside gets soft and fluffy. You can use a different potato such as Yukon gold but the outcome of the texture will vary a bit. I also find that waxy potatoes (such as red or yellow) tend to get darker on the outside faster, so keep a close eye so that they don't burn.
  • Sea Salt- Table or kosher salt will also work; adjust to taste.
  • Black Pepper- This can be left out if you'd like.
  • Avocado Oil- I prefer to use avocado oil as it has a high smoke point but you can substitute with your cooking oil of choice.

The Method

1. Prep the potatoes. Wash and scrub or peel the potatoes then cut into ¾ inch cubes.

2. Season. In a large bowl, mix the diced potatoes with avocado oil, sea salt and pepper to coat.

3. Air Fry. Add the potato cubes to the basket of your air fryer. They can overlap a bit, but I don't recommend more than 2 layers deep for crispiest potatoes. Air fry at 400 F for 18-22 minutes, shaking the basket every 5 minutes, until crispy and tender.

4. Enjoy!

Leftovers and Storage

To Store: Store leftover air fryer cubed potatoes in an airtight container in the refrigerator for up to days. I don't recommend freezing as the potatoes will become mealy with thawing.

To Reheat: Potatoes can be reheated in the air fryer at 350 F for 4-7 minutes or in the microwave until heated through.

Make it Your Own

  • Add Seasoning- I kept the recipe pretty simple for seasonings so that you can use it as the base for all sorts of flavors. Try adding the following:
    • Garlic Powder- include ½-1 teaspoon depending on how much garlic flavor you would like.
    • Cumin- add 1 teaspoon of ground cumin for some earthy flavor.
    • Italian Herbs- include 1 teaspoon of a dried Italian herbs blend or a combination of dried basil, parsley and thyme (similar to the potatoes in this Bruschetta Chicken Sheet Pan).
  • Top with Parmesan- After cooking, toss the potatoes with ¼ cup finely shredded fresh parmesan cheese just before serving.
  • Include Additional Vegetables- You can replace a portion of the potatoes with another vegetable such as sliced carrots or diced onions. Ensure that you cut these vegetables on the larger side so that they don't end up overcooked before the potatoes are done.

Serving Ideas

  • Breakfast: Enjoy these cubed potatoes in place of home fries alongside frittata, Eggs Benedict, bacon and more.
  • Chicken: These make a simple and delicious side to chicken skewers or roasted chicken.
  • Sandwiches: Enjoy these in place of fries alongside with your favorite sandwich like a grilled cheese or BLT.
  • Seafood: This is perfect for serving with roasted cod or baked salmon.
  • Beef or Pork: These crispy diced potatoes nicely complement steak, burgers, roast pork tenderloin or pulled pork.

Tips for the Best Air Fryer Cubed Potatoes

  • Cut into Even Sizes. Make sure that the potato cubes are all around ¾ inch so that they cook and crisp up evenly.
  • Shake the Basket. Give the air fryer basket a shake or stir every 5 minutes for most even cooking.

Instructions

  • Wash and scrub or peel the potatoes then cut into ¾ inch cubes.
  • Add the avocado oil and seasonings to a bowl with the potato cubes and mix until coated.
  • Place into the basket of an air fryer and air fry at 400 °F for 18-22 minutes until tender, shaking every 5 minutes or so.
  • Remove from the air fryer and serve hot.

Notes

Oven Directions
Roast in a single layer on a lined baking sheet at 450 F for 25-30 minutes until cooked and tender, stirring and flipping every 10 minutes. 
Leftovers
Store leftovers in an airtight container in the refrigerator for up to 4 days. 
To reheat leftovers, use the air fryer (350 F for 4-6 minutes), oven (350°F for 7-10 minutes) or microwave (in 30-second intervals) until warmed through.
